Tortillas and pie? This could be the beginning of a sweet love affair. In this recipe, refried beans and Mexican-inspired ingredients come together for a spicy yet savory dinner that cooks in under an hour and serves plenty. It’s also an incredibly easy and budget-friendly meal that you should be able to find some ingredients around the home and purchase the rest with a very small portion of your food stamps. In addition, you can skip adding beef if you rather just keep it vegetarian.

Ingredients List

  • 1 9″ pie shell
  • 1 lb. ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 16 ounces refried beans (canned)
  • 1/3 cup taco chips, crushed
  • 1 tbsp. chili powder
  • 1/2 tsp. cumin
  • 1 cup Cheddar cheese, shredded
  • 1 cup Colby Jack cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • Sour cream
  • Salsa
  • 1 can of tomatoes, diced
  • 1 Avocado, cubed

To cook this pie, you want to preheat your oven first to 350 degrees Fahrenheit. Take out the pie shell and prepare it according to your instructions, and then set aside. Get a heavy skillet and cook the ground beef first, adding in onions and garlic until beef is brown and vegetables are tender. Drain all very well, then stir in the can of refried beans, seasonings, cheese and taco chip pieces, which you should have crushed. Once heated, pour all into pie shell and sprinkle more cheese on top. Bake the pie at 350 degrees for about 35 minutes or until you see that the crust is golden brown and the cheese is bubbly. You can top with sour cream, salsa and avocado as you like.
