Prepare a charcoal fire and burn to a gray ash or preheat your oven’s broiler. Stir orange juice concentrate with soy sauce, butter, and mustard in a saucepan over medium heat until smooth, about two minutes.
Push cubes of beef onto 8 long metal skewers, divided evenly and alternating between any vegetables that you like, in this case, mushrooms, onions and cherry tomatoes. Brush orange mix evenly over the skewers, seasoning with salt and pepper. Bring the remaining orange juice mix to a boil in the saucepan, then remove from heat and set aside.
Set broiling pan or grill about 6 inches from heat source. Broil or grill skewers for six to eight minutes, turning over and often, until meat and veggies are browned. The onions and tomatoes should be a bit charred on the edges. Serve kebabs with the glaze on the side.
